What you should make this Halloween: a thread 🧵

1: hollow out a pumpkin. Set it aside.

2: get some rice in the rice cooker. better with a blend of styles including wild black rice. Don’t forget to wash your rice.

3. In a skillet brown some ground meat with a diced onion. I like beef, impossible burger or turkey burger.

Bonus points for some diced mushrooms to go along with it.

4. Add butter and flour to make a kind of roux with the meat and onions (and mushrooms).

5. Add broth to make a kind of gravy. (Not gonna lie you can short cut the last couple steps with a can of cream of mushroom soup if needed)

6. Add a quarter cup of cream.

With me so far? It’s about to get weird. (Spooky?)

7. To the hamburger/mushroom creamy white sauce gravy mix, add a quarter cup of raisins (golden and regular), a quarter cup of slivered almonds (or more), and a half cup of sliced Greek olives with the pimento 🫒

Told you.

8. Mix in the rice so it’s one big pot of creamy goulash. Should not be soupy.

Oh hey, remember the pumpkin? 🎃

9. Dump the goulash into the gourd!

10. Place the top on, and put the pumpkin in a roasting pan.

You’re probably gonna want to lower your oven rack that you (oops forgot to tell you) preheated to, um, I don’t know, 375?

11. Roast that sucker until the pumpkin flesh is soft and scoopable but still standing.

12. Serve the goulash with a generous side scoop of the pumpkin wall (season your stuffing accordingly to compensate for the plain pumpkin)

13. Garnish with pickled beets, hot sauce and fresh chives or green onion.

14. Don’t knock it till you try it. It’s crazy good.
