Since everything is tense and surreal, I decided to bake popovers for breakfast. Less than an hour from idea to plate, and so uplifting.
Popovers: 5 minutes to prepare, 30-35 minutes to bake
Preheat oven to 375, preheat the muffin or popover pans with a little slice of butter in each. In a med-large bowl use a whisk to beat 2-3 eggs with 1 1/4 c milk until smooth.
Add 1 1/4 c flour and 1/2 t salt; whisk until well blended. Divide batter among the hot, buttery cups and bake undisturbed 30-35 min, or until puffy & golden. Pop them out, take a spontaneous photo for your IG, slather w butter and preserves, and I'll meet you wherever you land.
Postscript: Yield is anywhere from 6 on up, depending on the size of the baking cups. If you want a greater yield, just make another batch 👍🏻

➡️Betsy DeVos, we have a few questions for you:
1/ If a teacher tests positive for COVID-19 are they required to quarantine for 2-3 weeks? Is their sick leave covered, paid?
2/ If a teacher with 5 classes a day with 30 students each becomes infected, do all 150 of those students need to then stay home and quarantine for 14 days?
