Making a great big pot - 15 ltres capacity of the real Northern Irish Ulster Vegetable soup. No puréed crap for me! 
Ingredients:
1 pack of soup veggies to include one large large carrot, leaks and parsley.
Barley (first steeped in cold water overnight)
Lentils
Boneless Shin Beef( two large pieces) 👇

Chop up veggies fine.
Heat up a separate pot with olive oil and brown the meat.
Carmelise the chopped onions after meat is browned
Boil a kettle full of water.
Use a measuring jug and put in a Knorr beef stock cube or beef stock pot. 👇

Add four heaped tablespoons of Bouillon Swiss Vegetable Stock powder into the measuring jug.
Put the meat once fully browned back into the empty soup pot
Add caramelised onions
Put barley, lentils and the rest of the veggies into the pot and fill with kettle of hot water.

Depending on how much soup you want to make or eg. prefer a thicker broth use 2-3 kettles full of water in the pot and keep some for topping up as pot steams over and liquid evaporates over cooking time. Use another Kettle full if you prefer weaker soup.
Bring to the boil and keep the mix plumping on a lower heat for one hour to break it all down. Add seasoning (salt and pepper)
Turn down and simmer for another 2.5 - 3 hours. Ready to serve but nicest the second day after reheating so don’t use it all up in one go! Slainte! 👍
