We see perfectly trained (professional stunt) horses, nothing less & nothing more. The horse leg work and quick reaction are beautifully seen here, the priority for the horse is not to panic but to avoid injury as much as possible.

Behavioural patterns of the (stunt) man: He's concentrated, stands with his back to the situation, playing ignorant, neither is he pushed into the pathway, nor is he making any attempts to get out of the way, he chose to remain there (in truth, he's awaiting the right timing).
