Sticky, sweet & spicy...what more could you possibly want? Apart from a side of Whipped Feta dip that is. These oven roasted Honey, Lemon, Chilli & Ginger Chicken Wings are today’s #coronacooking recipe
1kg chicken wings
3-4 cloves of garlic
1tbps grated fresh ginger
Juice of 2 lemons
2-3tbsp runny honey
2 red chillis
Salt & Pepper

For the Whipped Feta

120g Feta Cheese
200g Greek yoghurt
1 clove garlic
1tbsp olive oil
Cut the wings in three, discarding the tips. You could use these for stock if you are so inclined. Heat your oven to 180c. Toss the wings with some salt & pepper, pop into the oven to about 25 mins until they start to lightly brown.
In a large bowl, combine the lemon juice & honey, you want about two parts juice to one part honey, with the garlic finely chopped, the ginger and one of the chillis, deseeded & thinly sliced.
When the wings have just started to brown, take them out of the oven and toss them in the lemon/honey mixture. Let them stand for about 30 mins if you have time. Warm the oven up to 200c, put the wings back in the roasting tray and pop them back in for another 20-25 mins
Put the ingredients for the dip in a blender & blitz to a smooth dip. Pop in a bowl as you wait for the wings to finish. You’ll have lots of this dip left over, but it will keep for a few days in the fridge if you don’t use it all. I love this on some hot crispy bread as a snack
When your wings are done, serve up, dressed with a little more finely sliced chilli, some sesame seeds and lots of creamy dip. Luscious.
