Orange & Cardamom Scone Swirls - today’s #coronacooking recipe. Served with fresh berries and chantilly cream. After yesterday’s #fitfood we are back to #fatteningthecurve
It’s been years since I made these. They are lovely - and again, really quick and simple. Perfect for an afternoon treat or for a post supper dessert. My favourite scone recipe is the basis of this dish. #coronacooking
Ingredients:
450g plain white flour
1 headed tsp bread soda
1/2 tsp salt
1tbsp sugar
50g butter
1 egg
250ml buttermilk

For the filling:
Grated rind of 1 1/2 oranges
60g sugar
1/4 tsp ground cardamom

To serve:
Mixed berries
Chantilly cream

Preheat oven to 200c. Combine all the dry ingredients for the scones in a large bowl. Cut the butter into small pieces & rub into the mixture until it resembles fine breadcrumbs. Make a well in the middle, lightly whisk the egg, pour it & the buttermilk in. Mix into a soft dough.
Turn it out onto a floured surface and shape into a rectangle. Roll it out so it’s about 1cm thick. Mix together the orange rind, sugar and cardamom. Spread it evenly across the rolled out scone dough. Starting at one narrow end, roll it into a sausage shape.

Cut it into ten to twelve even slices. Pop them onto a lined baking tray, leaving enough room for them to rise. Put them on the oven and bake for 12-15 mins. Once cooked, put them on a wire rack to cool for about 15mins.

Now, make the Chantilly cream. Add 1tsp sugar to 250ml of cream, along with about 1/2tsp of vanilla essence. Whip to soft peaks. Wash & prepare your berries - use whatever is available. Plate up a scone with a pile of berries & few spoons of chantilly cream. Enjoy!

I would also have these with non-fat Greek yoghurt instead of the cream. Reduce the calories a little and I love the tang of yoghurt. The one in this pic is from @Aldi_Ireland It is my favourite & highly recommended if you want to limit the degree to which you #fattenthecurve
