Here is today’s #CoronaCooking recipe. A healthier take on that #Irish takeaway classic - The Spice Bag. None of this is deep fried, so it’s much lower in fat and really tasty. #covidcooking #ColmCooks
Ingredients:
8-10 chicken wings
180g raw king prawns
6 medium Potatoes
1 carrot
2 onions
1 red pepper
2 cloves garlic
1 egg
100g flour
1tsp Salt & some black pepper
1-2tsp Szechuan pepper or chilli powder
A few red chillis & spring onions to serve

For the spice mix:
3tsp flaky sea salt
1/2tsp chilli powder
1tsp white pepper
1tsp onion salt
1tsp Chinese 5 spice powder
Heat oven to 250c. Peel & cut potatoes into chunky chips, rinse thoroughly. Bring pot of water to boil & blanch chips for 3 mins. Drain. Toss in olive oil & some fine polenta if you have any. If not just oil is fine. Roast on a baking tray for 30mins, turning once halfway through
Mix the flour with salt, Szechuan pepper or chilli pepper & some ground black pepper. Whisk an egg. Discard chicken wing tips & separate remaining 2 sections. Dip wings & prawns into egg, one at a time. Toss them in the flour to lightly coat.
Put chicken wings in oven once chips are halfway through their cooking time. Don’t cook the prawns until chips are done as this temp is too high for them. Your wings should be cooked after 15 mins, if they need a little longer, just reduce the heat to 180c & give them 5 more mins
Make up spice bag mix by mixing spices together well. You won’t need all of this for one meal - it will keep in an airtight container for future use. Chop onion, pepper & garlic. Finely slice carrots into very thin strips. Thinly sliced will do if this is too fiddly for you.
Pop prawns on a baking tray & into oven for 10 mins. Don’t over cook or they will be very tough. You can bake your veg at the same time, tossed in a little olive oil or cook them in a wok with a little oil. Sprinkle the veg with a tsp of the spice bag mix while cooking them
Once the prawns & veg are cooked, you are ready to assemble. You might want to give the chips a quick blast in the oven to ensure they are good & hot. Toss the chips in some of the spice bag mix. Throw in the chicken & prawns & mix well. Taste, and add more spice mix if needed.
Add veg, toss up a bit & plate up. Finish with some finely sliced red chilli & spring onion if you wish. Tuck in. For an even healthier version, use chicken breast instead of wings, and sweet potato instead of regular potato or even a baked sweet potato. Delicious & nutritious
