As dalma was trending in Odia Twitter, so thought of sharing the recipe with you all*.

*It's only for those who prefer healthy and balanced food. Rest can ignore.

You can start the process by cleaning and soaking a cup of toor dal for 10/ 15 mins. #OdiaCusine
Meanwhile u can chop vegetables. In rural areas they use plenty of vegetables to prepare this dish but here I m using selected few. I have added carrots which authentic dalma recipe doesn't include.

So I have taken brinjal , papaya, potato, beans, pumpkin, carrot and tomatoes.
Previously we used to boil dal and all vegetables in a utensil but now , mostly people put these all along with 1 spoon turmeric and salt, in a presure cooker and wait for 1 whistle in high flame.
After boil it looks like this 👇
For tadka, the common ingredients are: Mustard seeds, hing, oil (preferably deshi ghee or mustard oil) and red chilli.
Heat ghee or oil in pan , add mustard seeds, red chilli and hung. Allow it to splutter.

You can add chopped fried onions and garlic in tadka, if u wish to.
Taste enhancer :

Dry roast cumin and red chillies and then prepare a masala powder out of it.
Taste enhancer :
Grated coconut, ghee and roasted cumin+ red chilli powder . Add these to ur dalma before you serve this with Ghee Arna (rice) and fresh lemon.
