I would like to propose a delightful cake that goes perfectly with afternoon tea. This is in memory of Jean Gooch, my dear mother-in-law who recently passed away in her deep sleep.

20 min to prepare, 30-35 min to bake
3 “hard” apples (e.g. Granny Smith, Honey Crisp or Jonagold); 🍎🍎🍏
4 eggs; 🥚🥚🥚🥚
4 oz. of sugar;
6 oz. melted butter;
(cont.)
1 tsp baking powder;
pinch of salt mixed in the flour; and
Confectioners’ sugar, for dusting
Preparations
1. Two bowls and one cake pan.
2. Preheat the oven at 350F/180C.
3. Put a bowl in the oven with the butter as the oven is warming to gently melt it.
4. Grease and line the bottom of a round cake pan.
5. Peel, core and cut each apple to bite size chunks.
1. Cook the apples for 3-5 minutes in medium heat, add 1 tbsp of water while cooking.🍎
2. In another bowl, mix and beat the eggs well, maximizing the air bubbles is the key. 🥚

4. Add the egg mixture and to the now cooled butter mixture and beat together.

6. Put all the apples at the bottom of a cake pan, pour the mixture in and smooth the surface.🍎✨
