Moist, because butter+oil instead of just butter. Applesauce is known to make cakes moist as well!
Keto friendly tofu and beans stir fry with almonds and fresh basil :)
Goes well with a bowl of rice or tossed in some rice noodles as well.
Took me anywhere from 10-15 mins to make.

I recently learnt from @Saeek about the use of fried/deep fried coriander in Maharashtrian food. A true flavour bomb! So used that, and some coconut, coriander seeds in the stuffing. Baked the eggplants (brushed with oil). Crisp-ish skin, super tender flesh. Turned out great :) Image

Baked cauliflower gratin with Begum Victoria's brie and bel paese cheese. Generously gifted by @_aamnakhan :) topped with shredded pepper.

Sunday well spent! Helped mother in law with sevai. Unfortunately, couldn't be there for most of the laborious process... Image
She is super patient. Soaking the rice, grinding the batter, cooking it, steaming it into balls...then squeezing them.
The depth of flavours a simple rice develops during this (involves a tiny bit of oil) is fantastic!

No sugar (couple of tbsps of jaggery), no whisk. Jist blitz stuff in a mixi, mix with dry stuff and voila! Took exactly 20 mins to make :)

That's almost 300g paneer from 1.5L full fat milk. Nice and soft, perfect for koftas, patties, bhurjies etc. Even sweets :)
69Rs for milk (23x3) and a buck or two for the vinegar. I'll take this any day! Image
What's cool is Nandini milk is typically unhomogenized, so it costs only 23 bucks for half liter full fat milk (6%). Other brands usually cost 29 bucks. That's ~20% less expensive. Nandini rocks ;) 😬
Remember the fresh paneer I made yesterday? They went into this baked Bharli wangi with some shenga chutney, salt and a pinch of goda masala :D

3 leftover idlis, few pieces of leftover baguette, forgotten beaten egg.
They combined with some onions, tomatoes, lots of finely diced green chilies, crrrrunchy fried golden urad dal, curry leaves & coriander to form a quasi kothu/upma.
Bottom line, good food for this weather :) Image
10 min. crispy tofu and eggplant in soy sauce and red wine. With a dash of chili, ginger and garlic powder, the piping hot wok does the trick. Added some almonds for sweetness and bite.

Kiddo turns 3 today :) Nandu and I baked him a cake featuring one of his favourite characters and one of the first books he got into.
The base cake is @amandahesser 's dump it chocolate cake. Excellent recipe! Cake was moist even after overnight refrigeration. Image
We baked two bundts, cut them and arranged into a 3.
Then we used Erin Mcdowell 's classic buttercream frosting recipe.
The antennae are Nutties on toothpicks. "tacky", "psychedelic" and "homely" but the process was sheer joy. Brb stopping son from eating 3rd slice in 10 mins.
Kodi Millet & chenna patties.
With caramelized onions, rosemary, balsamic vinegar & dehydrated garlic. Homemade chenna helps control how moist these turn out. Great on their own or tucked in a bun w/ cheese.

Thai red curry with the works. Had some good, fresh galangal, lemongrass, kafir lime leaves. Only difference is, I used byadgi chili and jaggery instead of red bird chilies and palm sugar. The colour is more than adequate :D

Sticky tofu fried rice.
The stickiness comes from a mixture of tomato sauce, carob molasses and pomegranate molasses. If the rice is already cooked, this takes less than 10 mins to fix :)

It has no onions, no garlic, no tomatoes.
The flavours come from the boiled and fried raw bananas, coriander stems, coconut milk, mustard oil, kasundi and a tiny pinch of panch phoron.

e-cooking with @iRatzzz was SO much fun! I learnt this amazing pachcha (uncooked) puLi rasam from her.
Takes a few minutes to make, has no rasam powder and is loaded with spectacular flavours. She came across this at a hotel in Erode where this was the only vegetarian option :D Image
@iRatzzz We (@iRatzzz & I ) also made some hand rolled pasta. With a simple sauce made from onions, tomatoes, garlic, pasta water, pepper, lemon zest, lemon juice & some flour for thickness.

Khatta meetha kaddu with Kala chana.
The khataas/tartness comes from anardana, amchur and some tomatoes.
There is a small pinch of jaggery as the kaddu wasn't as sweet. Garam masala rounds it up well & cooking mustard oil takes this to a different level :)

Step 1. On a good old wood fired stove.
Dollops of home made white butter ❤️❤️❤️❤️❤️ (they sell that separately as well).
Also note the podi kept in the mug. That's exclusively for the open dosE.
Time to flip. That's a good colour, but not the final colour. Prestige of that trick will ensue in a bit ;)
Slather some kempu/red chutney and BOOM...more butter. Damn it smells heavenly 😇😍
And that's a wrap. The last 4-5 seconds. Just...speechless.

Pineapple kesaribhath at its finest. You're guaranteed to get pineapple chunks, some cashew nuts. Not too greasy, not too sweet, just right. Image

Aaloo palak kadhi. Spinach and curry leaves from home garden. + used buttermilk from ghee making to form the base of this kadhi.
And some beetroot palya with onion, garlic and goda masala.

Made some cheennar kofta curry. Home made paneer, made into cutlets instead of koftas, pan fried till nice and golden and crisp. Then gently dropped into a gravy with kasundi, malai, panch phoron and a touch of coconut milk :)

An ode to Chikkanna tiffin room.
More than 50 yrs old, they continue to serve some sublime food.
In my view, their signature is thuppa Khali dosE. dosE made with no oil, super soft and pillowy, followed by some chutney, palya and (if you pay extra), a generous splash of ghee :)
This is their original Cubbonpete branch. They have one in seshadripuram as well.

Their idlis are good too!
Pudi idli (idli+ghee+generous topping of pudi with hints of garlic). Served with chutney and palya. The chutney is alright, but the idlis are soft and fresh :) Image

Lot of darshinis add a dollop of butter. When said extra benne, she (person Manning...or in this case womanning ;) )
The counter promptly corrected me "thuppa"...they don't have benne. Tastes top notch!

Finally, after ten years, managed to visit Siddappa hotel for some thindi.
It's more like a home by a temple.
They open at 8:30 a.m. and close by 11:30 a.m.
Queue starts forming around 8:15 a.m.
You sit, and you're asked what you'd like. Image
There is idli, with the option of ghee on top, khali dosE, again with the option of ghee on top. Then there is "rice".
And finally, the coveted masal dosE. One has to wait for it. I chose to have it first so it was agonizing to see people around me chomping idlis etc.
Everything is HOT. you could see the steam emanating from every single plate of idli, and I observed this for the entire duration of my stay (about 40 mins.). Then came my dosE. Cut in half. Apparently, the demand became so high that historically, they serve half dosE. Image
The food was good! No frills, nothing fancy. Good, crisp dosE. The palya inside was great! The masal dosE is served with chutney (kinda thin, nothing much to talk about). Everything else, with chutney and saagu. Image
Then I had their rice. Realy flavourful pulav like preparation. Again, hot, fresh & flavourful. The food is not heavy, which is why a person, on an average, has all the items once for breakfast ;)
I finished with idlis with thuppa (duh!). Glad I checked this place off my list :) Image
Aaloo matar (bahut saare matar #youremember :)) and tandoori capsicum paneer (just used Shan's tandoori masala that's all) for lunch.

I had moved into a new job after facing a toxic work environment.
I had gone through a spectrum of emotions. Ranging from resignation to fate to 'hey I'm better off than many people so let me not complain'.

After getting into a frame of mind where there is a shred of empowerment to decide things for them selves after being force fed
societal norms for almost 75% of those 34 years from 'well wishers'.
Study well. These are your career paths. These are your life paths. Marry on time. Have kids on time. Buy a house. Save. Close loans. Invest in savings. Invest in retirement plan. Save now. You can spend later.
