Rose petal, pomegranate and pistachio ice cream on the go @WasOnceLoved
About 500 ml of double cream (2/3rds) + milk (1/3rd) heated gently with the petals of clean (non sprayed) scented rose petals (Gertrude Jekyll today). Brought to below boil and switch off
Infuse for 30 mins
Meanwhile whip together 3 egg yolks and 100 gram of vanilla sugar.
When the cream/rose petal infusion has developed strain the cream into the egg and sugar mix and beat thoroughly.
Then make a custard in the usual way.
When coating the back of spoon, cool.
I’m guessing about 75 g of pistachios chopped (I usually toast a bit first) and about double pomegranate seeds.
I add these to the ice cream mix after I have put it into the custard into the ice cream churner bit by bit.
I then spend the rest of the summer perfecting a quick one with evaporated or condensed milk then forget to save the best version and start again each summer. Watch this space.
But the slow egg custard version is best.
I should have said 3 head of roses, petals removed for the infusion and checked carefully for bugs. None at all today!
Sometimes if the heads are smaller I use 4.
My favourite roses for this are Spirit of Freedom.
