Only those born in paaramparya Archaka families can even think of going inside the sanctum and officiating duties. In some sampradayas, this initiation begins right from the time the child is in the womb itself. Other Brahmins, & many times even Mathadipathis, do not have access
You talk of birth-based caste system. From a Vedantic perspective, everyone is a born Shudra. In Chandogya, there is a line in which Rishi Raikva addresses the king Jaanasruti as a Shudra. Both Sri Shankara and Sri Ramanuja have commented here that the word Shudra refers to
Shuchaa dravathi iti shudrah: meaning one who always laments and is in sorrow (samsara) instead of contemplating on Brahman.

From a Smruti PoV, all those who do not undergo upanayana samskara are Shudras. That does not mean that they are low-born or anything of that sort.
In an organization, not everyone can aspire to do everything. There are distinct roles based on qualifications. Now people don't call that discriminatory coz it is a matter of feeding the stomach. But Dharma Sastras are a punching bag so hyperventilation on SM is justified 🤷🏻

The sthapathis, kulaalas, gruhavasthushilpis, nagaravasthushilpis etc who were instrumental in building the great temples of today are all Shudras. Varna vyavastha is not just for humans. It's applicable to all creation including trees, rocks, and Devatas themselves.
Ask a sthapathi rocks used to make murthies and he will tell you about different varnas of rocks. Once praana prathista is done, even the maker of the diety, who chiseled every feature with his own hands, will not go inside the garbhaalayam.
If there indeed is so much discrimination, Vedas will not proclaim lokaah samasta sukhinobhavantu or Sanno astu dwipade, Sham chatuspade (may peace be to bipeds and quadrupeds). In fact, in Rudram, there are many places where Bhagavan is addressed as a Shudra
with words like Namo Kulaalebhya: (potter)
Namo Kamaribhyascha (blacksmith)
Namo mrugayugbhya: (hunter)
Namo shvapathibhyascha (dog keepers)
Purusha Suktam says Padbhyaam shudro ajaayata. Shudras have sprung from the feet of the Primeval Purusha. Now, isn't everyone seeking sharanagathi and hasn't Ganga sprung from the same Feet from which Shudras have been created? What's the issue here, I don't understand.
One should learn not to mix complete, realized knowledge with political BS. Doing so will lead one nowhere. Every family has a tradition. Follow that without giving into political vicissitudes and Dharma will automatically reign supreme. Esha Dharma Sanaatana:

Seriyana loosu. This is why I said Eelam activists are better off doing kuthu rap instead of worrying about whether Shiva is Vedic or not. Then these same people say Om Namah Shivaya. Adding Om and Nama: automatically makes it a mantra.

This reminds me of this wonderful shloka by Leelashuka in the Sri Krishna Karnaamrutam

Yadromarandra paripoorthi vidhou adakshaa
Vaaraaha janmani bhabhuvu: amee samudraa: |
Tam naama naatham aravindha drsham Yashoda
Paanidwaya antara jalai: snapayaam bhabhoova ||
When this same Child took the form of Adi Varaaha, waters in all the oceans put together failed to fully drench His hair follicles. But now, Yashoda is able to bathe the Lotus-eyed One with with just two handfuls of water.
It is interesting that Leelashuka drew a parallel with Varaaha avatar here. Even Adi Shankara in His magnus opus Soundaryalahiri says, Nimadhanam damshtra muraripu Varaahasya bhavati.

Semi-literate fool. The sanctum sanctorum of a temple is called a garbhalayam coz it's as sacred as a mother's womb. Don't we protect the womb carefully throughout pregnancy? Then what to say of the aalayam that holds the very Hiranyagarbha who is both the kshetra and kshetragna?
Krishna says in the Gita,
