Thread. So yeah someone posted this horrendous monstrosity in a local cooking Facebook group. I admit being drunk at the time and thinking: I can do my own take on PBJ eggs. Well I did and they were very yummy. 
After thinking about it for a day or two, I settled on a Thai take. End of this thread, I’ll show the results.
I went with rice noodles. Lemongrass, cumin, coriander, and some light fresh basil. I made a bed of that.
I hardboiled eggs and got rid of the yolk. In that spot went a spicy/sweet honey-based home made bacon jam. Made that Tuesday and it has been marinating in the refrigerator.
Yesterday, I made a curry, celery (ground), cayenne, peanut sauce. That too has been combining in its flavors.
Today was the main event. The bacon jam went into the eggs. The peanut sauce brought back to a drizzle consistency. Plated on top of the noodles. It was hella perfect.
The only thing I’d change if I did this again would be how I plated it. Peanut sauce spread on the plate first and the noodle on top of that.
I kinda want to start a thing where people send me totally terrible food pictures and I come up with a different take. It sounds fun and creative.
