The crispy layer is called Tahdig and it’s actually unbelievable. Who knew that crunchy rice would be such an impeccable accompaniment
Ok hi so recipe. Crispy rice tahdig is made in the (Iranian) rice cooker, you just tip it out and it’s already done. When you make it in the pot, add slices of pita bread or potato to the bottom of the pot after parboiling the rice and adding it back then steaming for 15 mins
Add lots of butter or ghee to the bottom of the pot or rice cooker while steaming.
