It's been a while since I made broccoli cheese soup. I'd forgotten what a tasty and easy recipe it is. So I thought I'd share it because it would be nice to talk about literally anything that isn't Kickstarter stuff right now. [thread] [CW:food]
Chop an onion and mince 2 cloves of garlic. Huck 'em in a big ol' pot and sauté until the onion softens. Add a bag of shredded carrots (or frozen crinkle-cut carrots or buy fresh carrots and shred them like some over-achieving maniac). Don't let the onions brown. Remove from pot
Add 4 tablespoons butter to the now empty pot. Melt. Add 1/4 cup flour and stir. Let the mixture cook (stirring so it doesn't burn) until it's a light blonde/brown color. Congrats you just made a roux. It'll help the soup be nice and smooth. Stir all the veggies back in.
Take 2 cups half-and-half and slowly drizzle it into the veggie/roux mixture, stirring constantly. Don't add it all at once. Go in batches, a little bit at a time. Once all the half-and-half has been mixed in, add two cups of chicken broth. (You can go faster with the broth)
Let the soup come to a boil over medium heat, then turn down to let it simmer. Cook for 10-15 minutes, stirring regularly so it doesn't stick.
While it's simmering, shred 10 oz of sharp cheddar cheese. (I do actually do this part fresh because it has more moisture than pre-shredded, but you do you, I don't know your life. Maybe you're busy and you don't want to wrestle a block of cheddar. Buy a bag, I ain't judging.)
Increase the heat a little and stir in the grated cheese a handful at a time, letting each handful fully melt before you add the next. Once all the cheese is melted, add in a bag of frozen broccoli. (Or, again, for you purists with time on your hands, chopped fresh florets)
Simmer until broccoli is tender, usually at least 5 minutes. Season with salt and pepper. I usually also add a dash of nutmeg, turmeric, paprika, and lemon juice. Sometimes more than a dash. Ok, USUALLY more because FLAVOR.
Eat! Pairs real good with sourdough bread.
