You loved my crumble recipe & you all seem partial to a scone as well. So I thought why not combine both? Here then is my Pear & Rhubarb Cobbler. A lovely comfort dish; a real hug in a bowl! #coronacooking
Ingredients
5 small pears
500g bunch rhubarb
100g coconut or brown sugar
1 1/2 tsp cinnamon
1/2tsp grated nutmeg
2tsp vanilla essence
225g plain flour
60g caster sugar
1tsp baking soda
100g cold butter
125ml buttermilk

Heat oven to 180C. Peel & core pears. Cut into eighths. Pop into a bowl of water with a little lemon juice to stop them from going brown. Wash, trim & cut rhubarb into 3-4cm lengths. Combine with the drained pears, coconut sugar, 1tsp vanilla essence, cinnamon & nutmeg.
Put the fruit into a deep baking dish. Combine flour, caster sugar & baking soda in a bowl. Cut the butter into small cubes. Rub into the flour mix until you have a nice crumb. Stir in buttermilk to form a wet dough. #colmcooks #coronacooking
Lightly flour your hands & make little balls of dough. Flatten a little & lay over the fruit, scattering randomly. Brush the dough with a little buttermilk, scatter with a little sugar & bake for 45mins. #coronacooking
The dough will spread & rise a little, becoming golden brown. The fruit will bubble up through the dough. Check to see if the fruit is soft. If not, give it another few minutes. When done, serve warm with Chantilly cream or a little tart Greek yoghurt. Dive in. #coronacooking
Few tips - To make Chantilly cream, whip 150ml of cream, with 2tsp sugar & 1tsp vanilla essence. If you don’t have buttermilk, add a little lemon juice to 125ml fresh milk to sour it. That will work perfectly. #coronacooking
