Chocolate Cinnamon Brown Sugar Cookies
These chewy cookies have an intriguing flavor: the delicate blend of caramelly dark brown sugar, cocoa powder & cinnamon.

INGREDIENTS
8 tablespoons (115 grams) unsalted butter, softened to room temperature
1 cup (205 grams) packed dark brown sugar
1 large egg
1 tablespoon water
1 teaspoon vanilla extract
1 ½ cups (210 grams) flour
¼ cup (25 grams) unsweetened cocoa powder

½ teaspoon ground cinnamon
Granulated white sugar for rolling
Beat the softened butter & the brown sugar together until super creamy and smooth; this could take 3-4 minutes.
Beat in the egg, the water, & the vanilla until well blended & smooth.

Stir together the flour, cocoa powder, baking soda, & cinnamon; beat it into creamed mixture in 2 or 3 additions, beating each addition just until blended & smooth. You may need to stir & fold the last addition in with a spatula. It should make a stiff but creamy dough.

Place in the refrigerator to chill for at least ½ hour for the dough to firm up.
Preheat the oven to 325°F (160°C). Line a large cookie sheet with oven/parchment paper. Place a few tablespoons granulated white sugar on a plate.
Shape the dough into 1-inch (2-cm) balls -
