Several Hindu Texts say that Surya is the supreme god despite there being million times larger things in Universe like 'Red Giants', What do the Hindu texts really want to signify here? Is Surya the supreme god or is there a philosophical meaning?

Hinduism is a really cryptic religion. As far as Surya Upasana, there are four to five different fundamental roots.

As Gratitude: Surya is a life giver. Everything on the Earth can be attributed to Surya. Nothing can sustain if energy from Surya is not available. Hence, we offer Gratitude to him.

Gratitude to ancestors: Puranas indicate that manes of ancestors stay in Aditya Mandala. They are the Gods who are directly linked to us through blood and they are always working towards our improvement. Showing gratitude to them helps us fulfill our desires.

From the name “Aditya”. A commentary on Vishnu Sahasra Namam by Yellamraju Srinivasa Rao mentions Aditya as one of Vishnu’s names, colloquially attributed to Surya. Some puranic stories say that Surya is son of Kasyapa & Aditi which is why he is called Aditya.

However, when we go deep, the real meaning of Aditya is “one who is present from Adi - the beginning”. So, Aditya is signifying the eternal reality (we call Paramatma or God).

As per Kundalini, we have three paths of pranic energy travel. One of them (Pingala) is related to Sun / Surya.

As per definition, Bhagavan is one who is full in six opulences—strength, fame, wealth, knowledge, beauty & renunciation. These 6 aspects led to 6 upasana paths. One of these is related to Surya (strength or fame). Worshiping Surya is to worship paramatma.

As per Astrology, Surya represents the Atma of that particular person. Hence he is believed to have a strong influence of a person’s life events.
