Daily #coronacooking recipe:
Brown Soda Bread with Hazelnuts. Heat oven to 180c.
Ingredients:
350g whole-wheat flour
100g white flour
2 tsp bicarbonate of soda
A pinch sea salt
A handful of wheatgerm
A handful of whole hazelnuts
1 tbsp molasses or black treacle
350 ml buttermilk
If you don’t have buttermilk, you can use soured milk.

You can skip the wheatgerm if you don’t have it, but it does give a lovely added flavour.

If you don’t have molasses or black treacle, use dark brown sugar. #coronacooking
Mix all the dry ingredients in a big bowl. Add the molasses and buttermilk. Mix it well. You don’t need to knead this dough at all, it’s a soda bread. It doesn’t require proofing, it just goes straight in the oven. #coronacooking
Pop the dough into a loaf tin. If you don’t have one, shape it into a round loaf and put it on a baking tray. Put it in your preheated oven and bake it for 50 mins. While it’s cooking, go for a walk or a run. Get some fresh air. Keep active. #coronacooking

Back from my run just in time to take the bread out. Good to check it after 45 mins. But 50 mins is usually spot on. I’ll let it rest in the tin covered in a clean tea towel for about 5 mins before removing it from the tin. #coronacooking
And here it is. All ready for a post run brunch. My Brown Soda Bread with Hazelnuts. No need for a frenzied run on sliced pans at Aldi when you can make this up at home yourself in just a few minutes. #coronacooking
If you don’t have buttermilk, used sour milk. Or you can make soured milk by adding a little lemon juice or white vinegar to fresh milk. Stir it in, just a little maybe a teaspoon, and let it sit for a few a minutes. Then work away with it #coronacooking
If you want a #vegan version, use a mix of 175ml of soya yoghurt and 175ml of your chosen plant based milk. Or try souring some plant based milk by adding lemon juice or white vinegar as per the last tweet. #coronacooking
Bake at 180c for 50 mins. It’s that simple. And really delicious. You need never worry about a run on bread at the supermarket again! #coronacooking
