Ugly bastards.
Quinces look like big gnarly pears. Inedible unless you cook them (or perhaps use them to flavour vodka!) They smell like a cross between and acidic apples and pineapple.
This lot will be jelly. They have a pineapple perfume which is sublime. My tree flowers first and is the last thing lose its leaves. An amazing tree. en.m.wikipedia.org/wiki/Quince

Add sugar (50/50 by weight)
Right, a long simmer, periodically removing the scum. Jam jars in a 100°C oven so when I pour the jam into them, there's no thermal shock causing them to crack.
And into the jars. Look how the colour has changed. Lovely.
Ok, trying Membrillo now. Heating up quince paste and sugar. It could take a while.
Greased some baking paper with butter and in tin. I'll pour the cooked mixture into this later.
Getting much darker now, so o reckon into the tin shortly. Oven on a 50°C preheat now.
Ok, into the tray and into the oven for quite a while, so results will be the morning when it has cooled!
And the Membrillo came out of the pan perfectly. Turned out onto a little icing sugar onto the cutting map. What fantastic flavour!
