Many years ago I was with a large party at a Chinese restaurant. My wife ordered crispy duck but my order never arrived. By the time they realised I was no longer hungry but I asked them instead to teach me how to make the crispy duck (it was incredible). Thread.
They took me out the back to meet the chef and he took me through it. To this day I have still never made it.

Crappy weather on Wgtn anniversary day so I figure, today is the day. I’ll take you guys through it. Started off last night by putting the fuck in a marinade.
Has autocorrect ever changed duck to fuck? I must swear too much.
Anyway, the marinade has Hoisin sauce, soy sauce, honey, plum sauce, sugar and five spice. Should be marinaded for 24hrs. Will keep you updated during the day.
Duck going on @ 150°. As I recall, the key was to constantly baste the duck during cooking with honey and soy.
Basting every 1/2 hr ish.
Oh my...the smell.
Some potato croquettes to go with the meal. Mashed potato, fried onion and butter rolled in egg and Panko breadcrumbs. I added another ingredient to the mix that may horrify you but I reckon works. Maggie onion soup mix. There, I said it.
The finale. Duck not as crispy as I wanted but very tasty. Flesh is incredible. Will try again.
