It turns out, perhaps unsurprisingly, that the windows MIDI synth - which the Steam version of Realms of the Haunting selects by default - essentially butchers the soundtrack. There are entire instruments I couldn't hear all last night, which work on the Adlib/FM version.
But since the Steam version offers no access to the installer, most players will never know this option is there.
The Steam version also offers no information about the DOSbox keymapper, which is an awkward tool to be sure but lets you remap the keys (which the game *cannot* do) to something far more modern and sensible. I played eight hours on arrows and mouse, no strafing! Agh!
So now I have
1) WASD movement, Q/E strafe, space for jump
2) SB/Adlib music
and the game feels MUCH better to play. WHEW.
