ALOO GOBI!!
Single skillet technique!
One large to medium head of cauliflower
Happy spoon of crushed garlic
1.5 lbs of red baby potatoes
Chopped yellow onion
Bag or can of English Peas
2 teaspoons curry
1 teaspoon Gram Masala
Salt to taste
Start with sautéing yellow onion in oil of choice
Add spices as onions soften
Mix that tasty shit together!
Add potatoes to the mixture and add that garlic liberally cause YOU AINT GONNA SEE ANYONE TODAY!
After that cooks a tad and the skin starts showing some browning scoot to one side of the skillet and break up that cauliflower head into the open part of the skillet. Add a little oil and a little more salt as you mix occasionally to brown parts of the cauliflower heads
Mix that damn goodness together and cover to keep the moisture in. “Folding” (#SchittsCreek reference!) every five minutes and cook for umm...25 minutes or so? I dunno. ITS NOT SCIENCE!
Once those taters start to soften, go through and cut em in half..you can also start with this, I just fucking forgot. It’s a stressful time.
Add them tasty English peas! PROTEIN! Canned peas work just as well, but because they’re already fully cooked add them just before removing from the stove. The fresh ones rule but ITS THE END OF THE WORLD SO DONT BE PICKY.
Also corn, canned or cut fresh is also splendid.
Mix it up. Cook till potatoes are soft. Covering the whole time. Add water (tiny amounts. Like tablespoons at a time) if things are getting dry. Eat that shit. It’s fucking good. Indians are awesome
