Problem with Costco is that everything is so big. I got carrot cake into my mind when there and did not feel like driving elsewhere. So I have tons of carrots. I do not trust California, even if it is for organic carrots, but cannot avoid food from there living in AZ. 
Next step make the carrot cake. I usually use Sonora wheat because it is good in almost anything, but I need to use up the kamut wheat. They have a farm south of PHX that grows heritage grain organic wheat of various types. I have an electric grinder. Normal wheat has a lot of
weed killer and chemicals in it. It is not always easy to switch to organic, but it is well worth it. Normal wheat is not good to have and oats are worse. Organic heritage grain helps a lot.
