In many old novels going for a walk with someone seemed like the typical thing, rather than doing lunch. I used this a lot in college.

Sadly outside of cities or campuses its harder to do, however...
Generally I have found "let's do [...]" doesn't work as well as:

"Be at my house at 5:30am saturday if you want to hike."

"Come over tomorrow at 11 if you're interested in brunch, I'm making [...]"
Especially true for making group plans: if you let people know you're going to do something regardless, people seem more enthusiastic, and they cancel those plans less.
This is (kind of) also how it's done in old novels!

Upon meeting people will say "we have supper on Thursdays," which I think is essentially an open invitation one day a week to stop by.
Two examples from Anna Karenina:

“Delighted to see you,” said Princess Shtcherbatskaya. “On Thursdays we are home, as always.”

and later:

“Delighted,” he said coldly. “On Mondays we’re at home. Most fortunate,” he said to his wife
We have thought about doing this with our friends. Picking a day of the week that we will always be home and cook for whoever shows up, so that we can say such a thing.
