@scarlett_jazmin -Fry 2 sliced onions and 3 cloves of mince garlic
- Add salt, cumin, chilli powder, turmeric and garam masala to taste (I usually do a tbsp of each)
- When the spices are aromatic, add a can of chopped toms (or 3 diced fresh ones)
- Let the sauce simmer till smooth
@scarlett_jazmin ^^ the above is a base you can adapt for any type of curry FYI!
@scarlett_jazmin - Then add 1 or 2 cans chickpeas, baby spinach, and some diced sweet potato (usually boil/microwave these first) with a can of coconut milk and a cup of water
- Simmer everything till cooked through (I usually mush the sweet potato a bit) serve with rice/naan and coriander👌🏽
@scarlett_jazmin If you want to take it to the next level, serve with achar (Indian pickle) and raita on the side for a BOMB meal
