Here’s my #recipe for my #lemon #blueberry #muffins (see pic). Hope you enjoy them!

Lemon Blueberry Muffins

2 cups all-purpose flour, spooned into measuring cup and leveled-off
2 teaspoons baking powder
3/4 teaspoon salt
1 stick (1/2 cup) unsalted butter, softened
1 cup granulated sugar
2 large eggs
1-1/2 teaspoons vanilla extract
2 tablespoons of lemon zest or to taste
1/4 teaspoon lemon extract, optional **
1/2 cup milk
2-1/4 cups fresh blueberries
2 tablespoons or to taste turbinado sugar
Preheat the oven to 375°F. Line a 12-cup muffin tin with paper liners. Spray the pan and the liners with non-stick cooking spray.

In a medium bowl, whisk together the flour, baking powder and salt.

Here are the ingredients: 2 cups of lukewarm water, a scant 6 cups of bread flour, a packet of yeast, 1 tablespoon of canola oil, 1 1/2 teaspoons of salt, and 3 teaspoons of sugar.

if you've been thinking of #baking your own bread at home during These Difficult Times, and are interested in #sourdough, here's a thread on how to get started, and some tips and tricks i've learned over the last ~decade of wrangling sourdough.
first things first: all you need for sourdough bread is flour and water. almost any flour will do, with varying quality of results. plain bread flour (the kind in big sacks) is fine. whole wheat is fine. rye is fine. spelt is fine. whatevs. you'll get some kind of bread.
Almost any sourdough bread you make yourself will be better than storebought, cheaper than storebought, last longer at room temperature than store bought, and will give you a frisson of apocalypse-surviving domestic badassery. Even if you suck at it.

Any #recipe for the beginners should, for completeness, also talk about the "cleaning" as well. "While the sauce/gravy is simmering, maybe it's a good time to wash the cutting board, and throw away the discards into wet-bin". "Rinse and dry the knife with a cloth" ... 1/n
"Add some (preferably warm/hot) water to the mixing bowl, so that it will be easier to scrub off the sticky contents" ...

The thing is, experienced cooks (and specifically women who have learned from their moms) already know all this, but novices don't. 2/n
And that adds to the stress of #cooking. There is also the added dimension: many married men who want to try cooking (and I'm speaking in the Indian context right now) are discouraged by their wives as they "make a mess of the kitchen". Men find it daunting -- the cleanup. 3/n

You need a small glass jar like the one om the pics (pic 2 curry paste). Important that NO AIR slips in whilst fermenting! Read following comments... ⤵️
1) Cleans the inside of the jar with boiling hot water to disinfect the jar. And keep hands, tools like spoons etc. clean & well rinsed to avoid detergents. Nature doesn´t like such things & we´re working with microbes here... 😉

Take chopped onions, Garlic pieces, Ginger pieces, a little yogurt, one big green chilies, one or two pieces of Olives, three to four pieces of cashew nuts, two almonds then use grinder to make a thick paste like the pic below. Keep it aside. >>
2. Take some yogurt and add Salt, Red chilli powder, Red chilli crushed, Garam masala, Ginger powder, one pinch of tikka masala, i table spoon qasoori methi and mix that well with yogurt n keep aside

* #recipe thread * Seafood Gumbo
1/ The expression "Put your foot in" means you cooked something exquisite. Seafood gumbo takes a lot of time and prep to do right. This is a pricey one, but if you ever decide to make it, folks will say you put your foot in.
2/ This is a big gumbo so I cleaned 5 lbs of Shrimp, saving the heads(You need them) and I peeled a few pounds of crawfish, saving the heads(You need them) Most don't live where Crawfish is available, Go to Wal-Mart and get a bag of Louisiana crawfish(Follow directions)
3/Make a stock first, so cut up...5 cloves of garlic, two lemons in halves, a couple stalks of celery, and a quarter to a half of onion. In a pot, put 9 cups of water, the heads of the shrimp and crawfish, the vegetables and lemon. A little creole seasoning, 3 bay leaves.. Boil.
