Arrancamos?
Para mi sí o sí debe llevar masa levada, así que en un bowl ponemos
500 grs harina 000 o 0000
20 grs oliva
20 grs sal
1/2 cubo levadura o 1/2 sobre de seca
250/300 CC agua tibia
Amasas hasta que obtengas un bollo liso...
Empezamos el relleno!
Picamos abundante ajo, cebollas y morrón, yo calculo la misma cantidad que la que voy a usar de pescado...primero ponemos aceite de oliva generosa...luego el ajo y apenas empieza a dorar (q no se queme!) Agregamos las cebollas, morrón y toque de sal.
Mientras voy a limpiar el pescado, voy a usar caballa porque es rica, y rinde mucho más. (Acá es difícil conseguir buena pesca)
Una vez cocidas las cebollas/morrón, agregamos el pescado desmenuzado
A ese 50/50 le agrego bastante pimentón dulce español, ají molido,sal, pimienta, un tomate cortado muy chiquito y huevos para que tome forma
Cubrís el molde con 2/3 de la masa y colocas el relleno, luego con el resto, haces la tapa, pinchas para que respire y la mandas al horno precalentado hasta que dore 😉
TRANCA PALANCAAAA (es más alta de lo que parece)
