"Electability" is the self-fulfilling prophecy that tells you to forget about who you want to vote for in a primary and imagine what a generalized Everybody Else wants. A notional white blue collar guy or suburban white housewife in Ohio or Michigan.
The only real way to find out who is "electable" is for everyone to vote for who they want. Otherwise we're just deferring to what other people tell us other other people want.
