Many in Remain camp do want to overturn the referendum result, but because:
A) referendum was deeply flawed
and
B) Brexit is too dangerous
C) nobody has agreed on a plan for Brexit
and
D) no deal is an unmitigated catastrophe
So no "theft" involved, of course, but overturning the referendum result still means a different outcome from 2016. And that argument resonates when in simplified form & emotive language.
1) It fans narrative that non-no deal Brexits aren't Brexit at all, ie notion of what is a "soft Brexit" shifts harder and harder
2) Increases pressure to put "no deal" on second ballot, if one is held - true nightmare scenario
