My thoughts? Probably the same as yours. (I assume you share my dismay.) I can only add a few speculations.

1) It would be astounding if, in the year 2019, the author of the graffiti can't be identified from a surveillance camera. So we'll probably know all about him soon.
2) Traditionally, French anti-Semitic vandalism comes in two forms: Islamist and neo-Nazi. The signature of neo-Nazi vandals is penmanship and precision. (Islamists scrawl childlike, uneven swastikas. Neo-Nazis desecrate Jewish graves with care and precision.)

Islamists here tend to be of North African origin. German isn't their language of choice. So my guess is when they find the perpetrator, which probably they will, they will not find a proper Nazi.
They'll find a feral youth, perhaps, or a squalid little antifa thug.

Either way, I'd guess it won't be someone who has spent many years cultivating his Blutbewußtrein and lovingly studying the proper way to scrawl that word on shop windows.
The penmanship just doesn’t convey that attention to detail. But who knows. When they catch him, we'll know more.
4) If they don't catch the perp, I'll be more shocked that there's a Jewish bakery in the heart of a European capital where you can do that without being filmed than I'll be by the act itself.
5) Still, no one should take this lightly. It's never a good sign when these taboos are violated.

6) The French government responded properly. *This* French government. What another would do is anyone's guess.
