The emphasis on sAttvIka AhAra actually is a vehicle for upward mobility and weakening of caste in contrast to a set up where caste barriers are insurmountable through personal behavior
Vegetarianism and other forms of personal austerity have in fact weakened caste in their own way by serving as agents of sanskritization

Contrast this with a world where barriers across communities are iron clad with no scope for upward mobility by changing habits
I have known many people who tell me..

I can marry the person I am dating from a different caste. Because she shares my habits and is also vegetarian / teetotaller etc..

So by making the behavioral standard supreme you are weakening the ethnic criteria for marriage
Liberals may not like this

But its a start to engineer piecemeal social change.
Traditionalists may not necessarily like this either

Because the behavioral standard then trumps your lineage.

It makes both liberals and Trads uncomfortable. And I like it
