I make fabulous omelets. I have a lefse griddle & use it to make my omelets. Today my best friend came over & I made an omelet with dry sautéed mushrooms & onions (richer flavor), bacon with all the fat rendered, sour cream, and sweet pickled Hungarian Peppers. Peppers made it!
Here are the receipts on my omelet virtuosity. This is an omelet stuffed with Hungarian Mushroom Cream sauce.
The second is filled with grilled pears and chevre.

I cut them open so you can see the filling.
Bacon Brussels Sprouts, and Red Pepper
Sausage, Mushroom, and Chard
Scapes, Green Onions, and Sour Cream

I love omelets for their ROI on your time. They are so fast and easy and yet really pack a bang in flavor and appearance.
I know pears in an omelet sounds odd, but pears when you grill them (I don't have a grill, I use the electric coils on my stove and extreme care) make a good savory. I like them in a sandwich, too.
