There are v. few clinical trials (rigorous evidence) looking at this issue. The associational data (epidemiology) is extremely weak.
For those of you who know relative risks, the RR of processed meat + cancer is 1.18 (from paper on which IARC decision was made) RR of unprocessed meat was 1.17. A .01 difference. Yet processed meat put in same category as cigarettes, which have a RR of 15-30. No consistency.
