The market for a delicious bowl of pho in Seattle is an example of the importance of a barrier to entry. My favorite pho spot closed. The number of places to enjoy the product is constantly expanding. Supply of pho increases to create a return = the opportunity cost of capital.
Another example is selling Banh MI. Saigon Deli will sell you an outstanding version for less than $3.75. A few months ago I walked in and ordered 75 Banh Mi for a charity fund raiser. The man behind me ordered 100. That's a tough business with low pricing power. Great food!
Maybe the margin is higher on the other prepared foods and the Banh Mi is a loss leader. Lots of fun stuff to try:
