This seems pretty far-fetched. Hate crimes and discrimination are defined in law and adoption wouldn't change that
For example, the govt has 'adopted' the IHRA definition of antisemitism. This has had no impact on discrimination law. I know this because I searched for references in court judgments to the definition and found none.

That's because the Equality Act 2010 defines discrimination
If there is a concern re police and/or CPS adopting a definition of Islamophobia and using it to inform their work preventing hate crimes, again the legal definition of a hate crime would be unaffected. There is no call as far as I know to include Islamophobia in hate crimes laws
