Would anyone like my recipe for Cambodian pumpkin soup that you can make even with a carving pumpkin? I just made it and it is delicious! 🎃 🥣
Okay recipe is:
-Chop your pumpkin innards into chunks & roast in the oven with some veg oil
-Meanwhile chip a medium-large white onion, 2 red chillis, a peeled thumb-sized piece of ginger, 3 cloves of garlic
-Heat a large glug of veg oil in a big big pan & fry it all until soft
-Add a big glug of fish sauce (leave this out if you want veg soup
-Roughly chop a large handful of fresh coriander (with stalks) and a large handful of Thai basil
-Turn the heat off and stir these into your onions etc
-Take your roasted pumpkin out of the oven & add to pan
-Add a tin of coconut milk
-Blend it all up & when it’s smooth season with salt & pepper
-If you’re using carving pumpkin add 2 teaspoons of sugar (any will do). You shouldn’t need to add sugar if you’re using eating pumpkin
-(It’s easiest to use a hand blender because you can blend straight in the pan
-TASTE YOUR SOUP! Add more salt and sugar if needed
-Make 500ml of stock (fish or veg) & add it slowly to the pan until it reaches your desired consistency
I like my soup how I like my men - THICK and STRONG (joke), so I only add about half the stock but it’s up to you.
-Turn the heat back on, on a low heat, and simmer for 15 mins or so.
-EAT YOUR DELICIOUS SOUP! 🎃🥣
