We have a cabinet in our dining room that the cats have decided must stay open. If I take the time latch it securely, with its little hook, the first one who notices it will come over and shake it with their paw until it jars open.

As far as I can tell, they are completely uninterested in the contents. They don't even hide inside it. There's another cabinet in the same room, much less securely latched, that contains their treats and catnip which they mostly ignore until we open, unless it's not latched.
They have simply decided, for their own inscrutable purposes, that this is the open cabinet. It's for staying open. That's what it does. That is its purpose. To be open.
"What does this cabinet do?"

"It opens."
