Post-doc is the only training position in the world that can be endless. You are very likely to start a family and have kids in the next 4-5 years and these $60K/year that sound a lot when you are a grad student might not be sufficient.
The number of PI positions is highly limited and many post-doc will compete with you on the same position. So many post-doc keep delaying their job search for "just 1 more year" to complete whatever story or stories that have been working on. But this year takes 3 and even 4 yrs.
At the same time, if you are not using your post-doc time to acquire cutting-edge skills, your value to companies will only be lower than a newly minted PhD.
On the bright side, it has never been a better time to start a company or join a start-up or a large company in health/pharma/genome/sys-bio.
If you do want to stay in academia, consider staff scientist position as well.
