If we genuinely wanted negotiations we'd have said, you know our issues, but let's talk. Instead saying we reject your red lines just says we don't want to talk.
This is what the EU 27 think. Whether or not you think they're right, it's what they think. They don't like being told it isn't what they think, or they're wrong to think it.
