Social distancing leads to @netflix n chilling...
So I watched what I assumed would be somewhat cringy #UglyDelicious episode about Indian food and well yeah it was. In the interest of not being too negative I share some thoughts...
Way too much Aziz that should have been edited out, was just not very interesting. Treating eating w your hands as some "exotic" marvel and not something over a billion ppl do EVERYDAY worldwide, pretty basic. Lots more I could say...trying to keep it positive #trying
Buried lede:
Dear @davidchang & @PadmaLakshmi the 1990s called and want their sad lament back "no one is doing for Indian cuisine in the USA". I think you both mean no man, in NYC with significant capital is "doing it for Indian cuisine" right? Bc you cut to @floydcardoz after
With all due respect to Chef @floydcardoz, what bothers me abt this set up is that Dave & Padma still think a cuisine will “make it” in mainstream America when this one hero/man will open a restaurant in NYC with the deep pocketed capital to “put Indian cuisine on the map”.
Meanwhile, @davidchang & @PadmaLakshmi let me introduce you to some folks near & far…

Well let's start w a man, in NYC with seemingly well financed restaurants, Manish Mehrotra: guide.michelin.com/us/en/washingt…
Also a man, and in NYC Chef Chintan Panya: starchefs.com/cook/content/2…
Then there’s Chef Meherwan Irani and his Southern Empire:

bonappetit.com/story/meherwan…
.@MeherwanIrani started this really cool thing called Brown in the South, where a bunch of S.Asian chefs cook together. It's called camaraderie not competition:

foodandwine.com/chefs/brown-in…
And WOWIE…look at all these Desi Chefs in the South :

Like Chef @ManeetChauhan, maybe you have heard of her? Food Network and all:
bonappetit.com/story/celebrit…
Chef Vishwesh Bhatt aka @kissmybhatt:

forbes.com/sites/michelin…
I wrote about some of them and what we have done and are doing with Indian cuisine in American here: plateonline.com/i-call-my-food…
Seasonal, Farm-to-Table ingredients you say @PadmaLakshmi? I work with several small farmers in the Bay Area. BUT have you heard of this guy…he’s been featured in the New York Times Chef Niveen Patel:
nytimes.com/2017/08/14/din…
Then there’s Chef Anita Jaisinghani from Houston (and she was in NYC for a number of years too)...we have disagreed about some BS a few years ago, but that doesn’t change that she is doing great things for Indian cuisine in America: houstonchronicle.com/life/food/arti…
In addition to myself in the Bay Area (and yes, I will be back with two new concepts this Fall..case you cared)

There’s Chef Heena Patel from @besharamsf : sf.eater.com/2020/1/22/2107…
Also in the Bay Area (but a man from NYC)

Chef Arun Gupta: sf.eater.com/2017/10/23/165…
SO MANY more Desi chefs that I'm fogetting. Maybe ask @ChandrasPlate or the 3 fantastic writers you spoke w @PKgourmet @KhushAndOJ & @soniachopra? But please know yr desire for a Indian Chef King from NYC to save us all is insulting. And we don't need HIM we are doing just fine.
