More bread. The timing on this one was a little off, so it rose longer than needed but didn't get a long enough prove. I also used beer for the liquid... meh. Came through too much with the wrong flavors. Still not bad!
Something that is logical from a science perspective and yet I had never thought about before is that is doesn't REALLY matter, except in terms of time, how much yeast you add. The bread is the culture, and they will grow to whatever extent the culture and time will allow
This was done in the equivalent of a dutch oven. I really like the crust you get with this method. Going to try the steam in the oven method next time, but I need to pick up more bread flour.
