We all need a treat now & again, and perhaps now more than ever. Today’s #coronacooking recipe fits the bill perfectly.

Blueberry & Lemon Muffins. These are so good - and really easy to make. Perfect for a breakfast or brunch treat. #baking
Ingredients:
225g plain flour
70g sugar
2 ½ tsp baking powder
Some fresh grated nutmeg
1 beaten egg
1 teaspoon vanilla essence
125 ml milk
80g of melted butter
Rind and juice of 1 lemon
250g of fresh blueberries

Heat oven to 195c. Mix the dry ingredients together in a large bowl.

Lightly beat the egg, add the milk, melted butter, vanilla essence, lemon juice and rind and mix well. #coronacooking
Combine the wet and dry ingredients roughly with a spoon, don’t over mix it, it should be a little lumpy and not too smooth. Add 200g of the blueberries, the rest are for a glaze to top the muffins once baked. #coronacooking
Spoon the batter into muffin trays. I have some great deep silicone muffin trays I bought online years ago that work brilliantly for me. If you are using metal trays, line them with paper, or butter the insides before adding your batter. #coronacooking
Bake at about 195c for about 15 min until the muffins are risen and firm to the touch. While they are baking you could make this lovely glaze to top them off. You don’t have to add the glaze, but it is really worth the little bit of extra effort it requires. #coronacooking
Add remaining blueberries to a small pan with 2tsp of caster sugar & some lemon juice. Cook down over a low to medium heat until it is like a runny jam. When your muffins are baked, let them cool a little on a wire rack & then drizzle them with the glaze to finish. #coronacooking
I had a little note batter than I needed, so I made the dinky little ones as well - now I’ll con myself into thinking I can eat a few more because they are so small! #coronacooking
If you don’t have any blueberries or can’t use them, adapt the recipe. Use this batter with your own favourites. Raspberry & White Chocolate. Raspberry & Orange. Banana & Walnut. Chocolate & Banana. Experiment. Have fun! #coronacooking
