Making bread thread.
1. Prepare yeast as described on the packet. It should become foamy in about 5 minutes.
2. Add one more cup of warm water, 1 tsp salt and about 2.5 cups of flour (50:50 whole wheat and bread flour).
3. Mix by hand or in a kitchen aid standup mixer to get a homogeneous dough. Add small amts of additional flour as needed. Cover with a kitchen towel and let the dough proof for about 45-60 minutes.
Let the dough *prove* not proof.
4. The dough should rise to at least double the original size.
5. Transfer the dough onto a floured surface.
6. Stretch and fold a few times.
7. Put it in the proving basket with seams down and cover with a towel for a second proving for about 30 minutes.
While the dough proves put the Dutch oven inside conventional oven and start preheating at 460 F.
I find that it is important to bake the bread in a cast iron Dutch oven. I tried open baking with a tray of water underneath but, Dutch oven works much better.
Be very careful while transferring the dough to Dutch oven. It is extremely hot. Put the lid on and bake at 460 F for 30 minutes.
Open the lid of Dutch open and bake for 10 more minutes et voilà a nice crusty bread.
