I'm guessing it was simple. You can lookup her name on a typical "people search" engine to find her email address. Then, you can lookup her email address in dumps like Collection#1 to find out a password she reuses across multiple email accounts, and access her online backup.
I've done this and have found numerous email accounts and reused passwords. I don't know if they can be used (because testing them may be illegal) to get to her iCloud backup or anything, but there's a good chance they can.
Looking up her addresses on haveibeenpwned.com, I find that the only place where her passwords have been disclosed is in that recent Collection#1 dump.
(by 'her' I mean the person Bezos is alleged to have sent his pics to)
The typical iCloud backup includes SMS messages. Or maybe she used the same email/password combo for other services that can be accessed to find the sext messages.
