On my recent trip into remote Andhra, I took a fascination to the iconic traditional breakfast 'Dibbarotti'. The process is tedious but the taste is equally mind blowing! Finally managed to master it!

I must confess, traditional Andhra recipes are highly time consuming, very tedious and require a lot of patience, if they've to be done right without compromising on anything! Only someone with the luxury of time can afford them!🙆‍♂

Other southern cuisines come across as easy!
Recipe!

Ingredients: Full round Urad dal (Minapa gundlu), sona masuri rice, rock salt

Process:
1. wash and soak 1 cup Urad dal for 10 hours.
2. Wash 2 cups rice and dry it in shade on a cotton cloth.
3. Grind the soaked dal without adding any water and keep aside.
4. Grind by hand ONLY. No mixer-grinder business pls!
5. Hand-pound the rice separately to make a coarse Rava.
6. Soak this dry rava into the Urad dal batter, add salt and leave for 10 hours.
7. The batter ferments and raises naturally.
8. In a wrought iron pan, heat a table spoon of sesame oil.
9. splutter a few jeera and mustard seeds.
10. Add 2 ladles of the batter and cook on low flame.
11. Once one side is golden red, flip the cake to the other side.
12. Dibbarotti ready! Serve with fresh Avakkai!😍
As i said, if you want it in the perfect way, you cannot compromise with all sorts of gadgetry in modern kitchens.

These traditional recipes deserve utmost respect and must be prepared the traditional way! 😎
