A great resource for examples of how to work with the {cansim} and {cancensus} packages is @dshkol’s blog dshkol.com. Posts come with the code to reproduce them.
My blog also has lots of examples, although I usually hide the code from the post but link back to the underlying RMarkdown notebook on GitHub.
