@DiegoATLAW Okay, it's not a real recipe, it's more by feel, but I'm going to do what I can
@DiegoATLAW First, shred your zucchini. How much zucchini? How much do you got? There's really no set amount. For the two of us, we just rolled through 4 zucchini
@DiegoATLAW Next, squeeze the zucchini, to get as much of the water out of it as you possibly can. That means take fistfuls hold it over the sink and squeeze. My wife, listening to me dictate the Tweet, is yelling at me that you can use cheesecloth too
@DiegoATLAW Next, you have a choice. Do you want to do this the long way or the short way? If you want to do it the wrong way, dice up some Vidalia onion, again don't ask me for proportions, she just eyeballs it oh, and added to the zucchini. The short way is crush some French's fried onions
@DiegoATLAW Next, mixing Italian seasoned bread crumbs oh, and eggs. We used for eggs for these for zucchini, so that says about one egg per zucchini, but that's because my wife put in a whole bunch of breadcrumbs this time
@DiegoATLAW My wife, who is very worried about how this will come out for all of you wants me to point out that it's not always one egg per zucchini, that's just how it worked out this time, and you can start to see why I said I don't really have a recipe to share, but I'm doing my best
@DiegoATLAW Take all of that, add some osem chicken bouillon powder because it's a kosher recipe and you're legally required to include osem in all of those, and mix everything together
@DiegoATLAW Now you're ready to make your tester. Make a single small zucchini pancake, and fry it on frying pan in oil until it is nicely browned on both sides. Taking off the pan and taste it to figure out what you need to do to adjust the recipe this time.
@DiegoATLAW Is it too loose? Add some bread crumbs. Too dry? Add an egg. My wife wants everyone to know that she's never had to add an egg. Does it need salt? Add sump. You used too much osem? Go buy another zucchini. My wife has faith that you'll figure it out. I know you guys better
@DiegoATLAW And that's it. Just fry them in oil, take them off of the oil to a plate lined with paper towel, and eat them before the other people in the house do
@DiegoATLAW You will have to cook them for longer if you use raw onion instead of the crushed French's fried onion. And don't expect them to ever be as firm and dry as a potato pancake. Good luck & God be with you. My wife wants you all to know she thinks there's something very wrong with me
