So I've seen several days of reporters whining and yelling about the outrageous actions of Wisconsin Republicans. All of them are framing the actions as somehow illegitimate or wrong "power grab".

This outrage is completely feigned.

What is happening:
Walker lost his re-election bid and a Democrat was legitimately elected to be the next Governor. The Republican legislature is now moving to pass several bills that will put in place some additional checks on executive power.
The bills would also put into place more limits on early voting.

These are reforms that those elected Republicans clearly support. It is also clear they were less interested in limiting the executive power when a Republican was Governor.
However, that does not make these actions illegitimate. The legislature has ever right to pass bills taking back power they previously granted to the executive. The fact that it benefits them does not make it less legitimate, except to those who prefer Dems have that power.
You can whine all you want, but that's how our system of government works. If the new Governor disagrees with the bills, he can ask the new legislature to reverse them after he is in power.

If WI voters disagree, they can vote out the people who vote for them.
The idea that the "right thing to do" is to somehow maintain the old rules or that a legislature can't pass changes after an election makes no sense. If that were true, the new legislature/Governor would take office as soon as an election is over.
Of course. This happens almost every time there is a change in power, but media only acts like it's outrageous when R's are the ones doing it.

Same reason Congressional Dems were willing to cede power to Obama, but suddenly want it restricted w Trump.
I prefer legislatures take back power from the executive at both the State and national level, but it seems to only happen when other side wins. That's what is happening here. You can think R's are wrong to do it, but nothing illegitimate about it.
