Pozole is traditional Mexican soup or stew dish often served during celebrations, Christmas and New Year's.

Pozole which means hominy, originates from Nahuatl and quite the history.
The hearty stew is often made with hominy or corn kernels and pork. It can be red or green in color depending on the type of chiles used in the base.

Pozole was a sacred dish to the Aztecs and other people in Mesoamerica for special occasions.
Maize (corn) was considered a sacred dish to the Aztecs.

Made of whole corn or hominy kernels, ancient Americans believed the gods made humans out of masa or cornmeal dough.

On special occasions meat was added to the pozole. According to the Instituto Nacional de Anthropología e Historia, the meat used was human. Prisoners were killed and their hearts were removed as part of a ritual sacrifice.

After the prisoner’s heart was removed, the rest of the body was chopped up and cooked with the maize.
The stew was shared amongst the community as an act of religious communion.

After the Spanish arrived in the 1500s, cannibalism was outlawed and pork was the substitute as it tasted very similar to human flesh, according to Bernardino de Sahagún.

While cannibalism is no longer practiced when eating pozole, it still one of many celebratory dishes of choice in the Nayarit, Sinaloa, Michoacán, Guerrero, Zacatecas, Jalisco and Morelos states in Mexico.

There are three types of pozole, blanco, verde and rojo, the color of the soup base mirrors the Mexican flag - white, green and red.
White doesn't contain any chiles.
Green can have tomatillos, cilantro and jalepeños.
Red can have guajillo, ancho or piquin chiles.

Pozole is usually accompanied by condiments such as radish, onion, lettuce, cabbage, avocado, lime, oregano, tostadas, chicharrón or chiles.
Although it's made with pork, it can be made vegetarian by swapping for beans. Sometimes chicken is used.

Today the beloved pozole is served at birthdays, special occasions and holidays. It is considered a comfort food as it warms you from the inside out.
